How exactly did that work?
I am unsure of the science of it, though ancient writers have written that boulders were broken up using vinegar and fire. Vinegar is a form of bad wine which it appears Hannibal had plenty of.
This is from the works of Livy as far as I can determine by googling.Apparently vinegar was used to accelerate the freeze and thaw cycle and break rocks to make a way through a rockfall.Apparently at the time this technique was known to miners.Any liquid might have sufficed but bad wine was a waste and in surplus so believed to be used.
I was surprised to find out that the exact route Hannibal took is still unknown.No archaeological evidence has been found for it.
